MG: making cake

cupcakes for a birthday boy

dressed in strawberry cocoa chantilly

cake based on Nigella Lawson's "Dense Chocolate Loaf Cake" (How to be a Domestic Goddess, pg 166). i replaced some of the water with yogurt, decreased the sugar, and melted the butter with the chocolate. oh, and i used white whole wheat flour, my default flour. it seems to work for all sorts of baked goods except for ones needing lots of gluten. chantilly was heavy cream whipped with strawberry extract, cocoa powder, and agave syrup--Meiji's Apollo strawberry chocolate being one of the favorite candies of said birthday boy.

  1. those look great. I love your silicone cupcake holders!

    - Julie

  2. So inquiring minds want to know where you found the lovely silicone cupcake holders??? tell all tell all

  3. They look delectable! Hope your hubby had an equally delicious day.

(They must be bakers who recognise a silicon cupcake case. I just thought they looked very neat).

  4. they are "Square Silicone Baking Cups" made by Wilton. i found them at a Meijer in town; i've also seen them in the cake decorating sections of craft stores. they come in various shapes and colors, and Wilton sells them directly here.

i'm usually not a fan of silicone bakeware (little heat conduction), but these are nice for cupcakes... sturdy, elastic, and nothing to throw away. and very festive. it's not always easy to "peel" them off the cakes though, but i don't mind eating out of them with a spoon if necessary.
